Many of these items below (and several more) are listed on the Lotus Notes and Domino 8 technical content page, Technical resources to help you get started with Lotus Notes 8.
Here is a pretty cool interactive training demo, "Using IBM Lotus Notes 8 Mail, Calendar, and Contacts, Guided Tour" (<<<--- this link seems to link IE more than FireFox, not sure why). Rather than just stepping you through a video, you have to perform tasks such as clicking on icons and buttons, just as you would with the real software. The user interface took me a minute to get used to. When you click anywhere on the screen, a set of controls pops up. The top button is a time control slider, the left allows you to take notes on screen, and the right provides a list of the avilable topics.

There is a two page training card, Using Lotus Notes 8 which you can print out:

Here is a nice 6 minute demo, Introducing IBM Lotus Notes 8. It is a file you download and run. I am not sure why it is not just a streaming video, perhaps so users can watch it offline anytime they would like.
